Ingredients
For the chicken

2 chicken breasts (boneless, skinless)

Salt & black pepper (to taste)

½ tsp garlic powder
-
½ tsp paprika
-
½ cup all-purpose flour
-
1 egg (beaten)
-
1 cup breadcrumbs (preferably Italian)
-
½ cup grated Parmesan cheese
-
Oil (for shallow frying)
For the sauce & topping
-
1½ cups tomato sauce (Marinaras)
-
1 cup mozzarella cheese (shredded)
-
2 tbsp grated Parmesan
-
Fresh basil or parsley (optional)
Method
1️⃣ Prepare the chicken

Slice chicken breasts horizontally to make thin cutlets.

Season with salt, pepper, garlic powder, and paprika.
2️⃣ Coat the chicken
-
Dredge chicken in flour → dip in egg → coat with breadcrumbs mixed with Parmesan.
3️⃣ Fry
-
Heat oil in a pan over medium heat.

Fry chicken 3–4 minutes per side until golden and crispy.

Place on a paper towel.
4️⃣ Assemble & bake
-
Preheat oven to 180°C (350°F).
-
Spread a little tomato sauce in a baking dish.

Place fried chicken on top.

Spoon sauce over each piece (don’t cover fully).

Add mozzarella and extra Parmesan.
5️⃣ Bake
-
Bake for 15–20 minutes until cheese is melted and bubbly.

Serve with spaghetti, garlic bread, or a green salad.

Garnish with fresh basil.

Don’t soak chicken in sauce or it’ll lose crispiness.
